Filipino's are known in the world as great cooks in fact President Bush and Oprah's Private Chef are Filipino. that just prove that Filipino have a great sense of taste. and one of the famous filipino dish is "Adobo"perhaps, is the most popular and most distinguished among all Filipino cuisines. It has been made reference to in the movie American Adobo and been mention in Black Eyed Peas Song "Bebot" it is a favorite among Filipino food. and among my favorite food too. just like pasta there are varieties of ways on how to cook adobo The most widely preferred traditionally is pork adobo, followed by chicken adobo-- although chicken adobo is very popular these days for health reasons. Other ingredients such as squid, beef, lamb, game fowl like quail and snipe, catfish, okra, eggplant, string beans, and water spinach (kangkong) are also made into adobo, so if you haven't tried adobo yet go to your nearest Filipino Restaurant or go here in the Philippines to give it a try and i guarantee you will not regret it. anyway if its impossible for you to visit Philippines and the Filipino restaurants is miles away from you. just do it on your own as it is very easy to cook. here is the recipe on how to cook your very own adobo.
How To Cook
* 1/2 kilo pork or chicken, cut in cubes for pork and cut in
pieces if chicken
* 1 head garlic, crushed
* 1 cup soy sauce
* 1 cup vinegar
* 2 cups of water
* 5 laurel leaves (bay leaves)
* 4 tablespoons of cooking oil or olive oil
* Whole Peppercorns
* Ginger (if cooking chicken or with chicken)
* Combine all ingredients in a pot.
* Let it simmer and boil until almost all the water is gone.
If you did not trim the fat off the pork, let the natural
oils of off it come out. You may add some cooking oil or
olive oil if there isn't enough to fry the meat.
* The meat will be very tender so be careful mixing it while
letting it fry on its own fat (or added oil) so the meat
doesn't fall apart or break.
